There’s a few ways to begin learning. I would recommend Celtic Spirituality by Oliver Davies and Thomas O’ Laughlin as a comprehensive introduction. The Voice of the Eagle by Christopher Bamford offers a translation of Eriugena’s sermons. Celtic Theology by Thomas O’ Laughlin can be difficult to obtain but offers a more in depth introduction.
Since you’re Albannach, I’d recommend learning Gàidhlig and finding a parish that offers Liturgy in the language. After all, the heart of any Christian tradition is present in the local language.
